Kerri, a faithful KoC follower from Danvers, MA, recently asked me for some slow cooker ideas for the Lenten season. I dug through the King of Crock archives and found my favorite MEATLESS entrees... here they are - Cheese Soup, Caribbean Shrimp, Clam Chowder (skip the bacon), Pumpkin Soup. Here's a brand new recipe.... a new look at the sloppy joe.... I think I will call it the DANCING SARAH.
1 cup shredded carrot
1 cup diced celery
1/2 cup chopped onion
1/2 cup dry lentils
1 cup (uncooked) brown rice
2 cloves of garlic (minced)
3.5 cups of vegetable stock
2 tbsp. yellow mustard
2 tbsp. brown sugar
1 tsp. chili powder
2 tbsp. vinegar
1 small can of tomato sauce
- combine all ingredients (except vinegar and tomato sauce) in the slow cooker
- cook on LOW for 8 hours
- stir in tomato sauce and vinegar
- cook an additional 1 hour on LOW
- serve on toasted buns.... ENJOY!
