RECIPE: Tuscan Stew


Slow cooking doesn't equal high calories/ high fat.  I found this great recipe in a Weight Watchers cookbook and tweaked it a bit for flavor (not more calories).  It came out great!  This is a good one to make on a Sunday to have for lunched throughout the week.
  • 1 lb. boneless, skinless chicken thighs (cubed)
  • 1 lb. chicken sausage (sweet Italian) 2 inch pieces
  • 2 cups halved cremini mushrooms (also called baby-bella)
  • 1 red onion, chopped
  • 3 cloves of garlic (minced or pressed)
  • 1 package of frozen artichokes
  • 1 bell pepper, diced
  • 2 cups low sodium chicken broth
  • 1/2 tsp. salt
  • 1/2 tsp. red pepper flakes
  • 1/2 tsp. black pepper
  • 1 tsp. dried oregano
Brown chicken and sausage in skillet with garlic and onion
Place meat in slow cooker
Add mushrooms and sprinkle with salt, pepper, pepper flakes, and oregano
Layer artichokes and peppers over mixture
Pour broth over stew
Cook LOW and SLOW, 7-9 hours
ENJOY!
