RECIPE: Short Ribs, Beer Braised

I was in Naples, Florida recently and ate at this great restaurant called Roy's.  It is a Hawaiian Fusion place right on the water.  Anyway, the food was amazing.  Edamame appetizer, Short Ribs for the entree, and the most amazing pineapple upside down cake for dessert.  I vowed I would try to recreate the short ribs in the Slow Cooker.  Here was my first attempt.....  it was delicious!  Not exactly the same..  but awesome none the less.  It also plates up really nice served with mashed potatoes.  YUM!

  • 2 medium onions
  • 3 lbs. bone-in short ribs
  • 1 bottle of light beer
  • 2 tbsp. tomato paste
  • 2 tbsp. dijon mustard
  • 2 tbsp. brown sugar
  • 2 tsp. dried thyme
  • pinch of pepper
  • pinch of salt
  • 1 cup of beef broth (low sodium)
  • 3 tbsp. flour
Cut the onions into wedges and place in slow cooker
Place ribs on the onions
Combine beer, brown sugar, mustard, tomato paste, thyme, broth, salt, and pepper
Pour mixture over the ribs
Cover and cook for 8 hours, LOW and slow!
Remove meat and onions from slow cooker
Transfer the liquid to a saucepan and bring to boil
Slowly stir flour into mixture until the sauce is thickened (3 or 4 minutes)
Serve sauce on ribs
