RECIPE: Slow Cooker Rosemary Potatoes

This recipe is a great summer side for your next BBQ. Throw the ribs and sausage on the grill and have this delicious (and healthy) side dish ready to serve.

8 - 12 red bliss potatoes, quartered
1 yellow onion, diced
2 cups of baby carrots
2 tbsp. olive oil
1/2 tsp. garlic
1/2 tsp. salt
1/2 tsp. pepper
1 tbsp. fresh rosemary, chopped fine
  • combine all ingredients in a large bowl and mix until the potatoes and carrots are coated evenly with oil and spices
  • spray slow cooker with cooking spray
  • place potato mixture in crock pot
  • drizzle any remaining oil and spices over the potatoes
  • cook on LOW for 6-8 hours
  • ENJOY!
