RECIPE: Cassoulet

It's a great day for a cassoulet!


What on earth is a cassoulet? This is a traditional slow cooked French bean stew, typically made with chicken. It is rich with flavors and easy to prepare.

HELPFUL REMINDER: Leave your lid on! It takes over 20 minutes for your crock pot to regain its heat after the lid has been removed. Resist the temptation to peak.

1 medium onion, diced
4 boneless chicken thighs (cut in 1/4 inch cubes)
1 lb. pork sausage (casings removed)
1 tsp. garlic powder
1 tsp. thyme
1/2 tsp. black pepper
4 tbs. tomato paste (concentrated strong flavor, don't overdo it)
3 cans of great northern beans (15 oz. each)
3/4 cup bread crumbs
3 tbs. fresh parsley, finely chopped

  • Brown meats in skillet
  • Add onion, garlic, thyme, and black pepper and cook until onion is translucent
  • Drain grease
  • Combine meat mixture in slow cooker with beans and tomato paste
  • Cook on LOW for 5 hours or until the beans are tender to taste
  • Combine bread crumbs and fresh parsley and sprinkle on top (if you find OLD LONDON bread crumbs in your local store, give them a shot... DELICIOUS!)
  • Cook on LOW for an additional 30 minutes
  • ENJOY!
