RECIPE: White Chili

This is a nice alternative to a traditional chili. Using chicken and low-sodium chicken stock makes this dish a much healthier choice than other chili. This recipe is loaded with flavor!

2 lbs. of boneless chicken (1 lb. breast / 1 lb. thigh) cubed
3 cans of white beans, drained
1 can of white whole kernel corn
1 yellow bell pepper diced
1 yellow onion diced
2 cloves of minced garlic
4 cups of low sodium chicken broth
1.5 tsp. chili powder
1 tsp. ground cumin
1/2 tsp. black pepper
(optional - 2 jalapeno pepper, diced small)
  • In a skillet, brown the chicken, onion, garlic and yellow pepper
  • Place chicken mixture in slow cooker
  • Add all other ingredients
  • Cook on LOW for 6 hours
  • Serve with shredded cheddar cheese and corn bread
  • ENJOY!
