RECIPE: Asian Inspired Chicken

Served over a bed of Jasmine Rice this moist chicken goes together with ease and is a great dish for entertaining. The choice of chicken is up to you. But as you know, the KING loves chicken thighs, so that's what I use.

2 - 3 Lbs. boneless skinless chicken thighs (feel free to substitute legs or even breasts)
2 tbs. olive oil
1/2 cup low sodium soy sauce
1/2 cup brown sugar
1 tsp. ground ginger
1 tsp. garlic powder
garnish with almond slivers or toasted sesame seeds (I like JFC White Roasted Sesame Seeds)

  • Brown chicken in olive oil over medium-high heat in a skillet
  • transfer chicken to slow cooker
  • combine soy, brown sugar, ginger, and garlic in a bowl and stir until blended
  • pour over chicken
  • cook on HIGH for 1 hour
  • turn over chicken to make certain it is coated
  • cook on LOW for 4 hours
  • serve over white rice and spoon liquid over chicken and rice
  • ENJOY!
