RECIPE: Pork Tenderloin w/ apricot and ginger glaze

This elevates the crock to CLASSY... imagine that.

A great way to prepare a delicious pork tenderloin, this recipe combines the sweet fruit flavors of the apricots, with the bite of ginger, and the texture of coarse ground mustard. You will not be disappointed. It can also be a great alternative to an expensive roast (this week at my local market, McKinnon's in Danvers, MA, I found it for $2.99/lb.) ENJOY!

1 (2-3lb.) trimmed pork tenderloin
1 jar of apricot preserves (12 oz.)
1 tsp. ground ginger
1 tsp. salt
1 tsp. pepper
1 tbsp. olive oil
1 shallot, finely chopped
1 red onion, finely chopped
1 tbsp. whole grain Dijon mustard (the King recommends MAILLE)
  • Heat oil up in skillet
  • Salt and pepper the tenderloin
  • Brown roast on all sides (6-8 minutes)
  • Move roast to slow cooker
  • In same skillet, combine shallots, onion cook until soft
  • Remove from heat and add ginger, apricot preserves, and mustard stirring until sauce is well blended
  • Pour mixture over pork
  • Cover and cook on LOW for 8 hours
  • ENJOY!
