A quick side note: Did you know that November is Georgia Pecan month. Another reason to celebrate! This recipe calls for some chopped pecans... GOOD STUFF!
4-5 lbs. sweet potatoes, peeled
1.5 sticks of butter
2.5 teaspoons cinnamon
1/2 cup orange juice
1.5 cups of packed brown sugar
1 cup of chopped pecans
- Cut sweet potatoes in 1/2 inch slices
- Place potatoes in slow cooker
- Melt butter in microwave
- Combine butter, brown sugar, orange juice, cinnamon and 1/2 cup of pecans and pour evenly of potatoes
- Toss to coat potatoes
- Cook on LOW for 7 hours
- Spread 1/2 of pecans over potatoes and serve
- ENJOY!
