RECIPE: Sweet Potato Casserole

With Thanksgiving just a few short weeks away, my thoughts turn towards SLOW COOKIN' Turkey day side dishes. Using the crock pot can be a time saver, leaving you more time to enjoy family or watch the game. Put this one on first thing in the morning and it will be perfection just in time for dinner.

A quick side note: Did you know that November is Georgia Pecan month. Another reason to celebrate! This recipe calls for some chopped pecans... GOOD STUFF!

4-5 lbs. sweet potatoes, peeled
1.5 sticks of butter
2.5 teaspoons cinnamon
1/2 cup orange juice
1.5 cups of packed brown sugar
1 cup of chopped pecans

  • Cut sweet potatoes in 1/2 inch slices
  • Place potatoes in slow cooker
  • Melt butter in microwave
  • Combine butter, brown sugar, orange juice, cinnamon and 1/2 cup of pecans and pour evenly of potatoes
  • Toss to coat potatoes
  • Cook on LOW for 7 hours
  • Spread 1/2 of pecans over potatoes and serve
  • ENJOY!
