RECIPE: Mediterranean Chicken

A delicious AND EASY Mediterranean Chicken recipe with a BONUS leftover recipe for a Mediterranean chicken wrap. A great recipe for a "fix it and for get it" meal.

6 boneless chicken breasts
2 cloves garlic
1 lemon
1/2 cup white wine (dry)
1/2 cup chicken broth
1 large can tomato sauce
1 small can tomato puree
1 can sliced mushrooms
1 can whole olives
1 onion, chopped
hot cooked rice (I like pilaf)
Salt to taste

  • Wash chicken and pat dry
  • Combine all ingredients (except the rice) into the slow cooker
  • Cook on LOW for 7 hours
  • Serve chicken over rice using remaining liquid in the cooker as a sauce
  • ENJOY!


Make a Mediterranean Chicken Wrap.

  • Use two forks to shred a chicken breast
  • Place on wrap with lettuce, tomato, feta, olives, chopped onion, and TZATZIKI yogurt dip (I LOVE the CEDAR'S products, available at BJ's and other grocery stores).
