RECIPE: Acorn Squash

It's HARVEST TIME!

Squash of all kinds can be found "on the cheap" in your local grocery stores. If you're lucky, you might be able to grab them fresh from a farm stand. Acorn Squash are one of my favorites! Here is an easy way to make a delicious autumn squash (BONUS: it makes your house smell really "FALL-Y").

2 acorn squash
pinch of salt
2 tsp cinnamon
3/4 cup brown sugar
4 tbs. butter
1/2 cup water
  • rinse squash and cut in half
  • place 1 tbs. of butter in each squash half
  • distribute cinnamon and brown sugar evenly amongst the squash
  • individually wrap each squash half with heavy duty foil
  • place squash halves in slow cooker and add water
  • cook on HIGH for 4 hours, or until tender
  • ENJOY!
