RECIPE: Roasted Summer Vegetables

SUMMER IS IN FULL SWING!

Is your neighbor offering up his prize winning squash? Not sure how to prepare them? Look no further than you trusty 'ol slow cooker. This easy and delicious slow cooker recipe makes good use of the summer crop of your favorite veggies. The King recommends the following, but use what's available to you... you can't miss!

2 bell peppers (1 green, 1 red) cut in wedges
1 large zucchini (sliced into large disks)
1 large yellow summer squash (sliced into large disks)
1 red onion (cut in wedges)
1 lb. fresh green beans
1 lb. fresh waxed beans
1 diced roma tomato
4 cloves of garlic (pressed)
3 tbs. olive oil
1 tbs. dried oregano
salt and pepper to taste
(2 tbs. of vinegar optional)
  • place all ingredients in slow cooker
  • stir to coat
  • cook on HIGH for 2 hours or until tender
  • add vinegar if desired (The king uses it depending on the accompanying meal)
