RECIPE: Harvest Chicken Soup

With a roller coaster of weather in the Northeast, tomorrow looks to be a soup kind of day. Here is a recipe for a delicious and hearty chicken and vegetable soup. Better weather is on its way... the King promises!

1 lb. boneless, skinless chicken thighs, cubed
1 tbs. oil
1 tsp black pepper
1 tsp salt
2 tbs. chopped fresh basil leaves
3 cups chicken broth
3 medium red bliss potatoes (dice, leave peels on)
2 carrots, sliced
1 medium onion, diced
2 cups small broccoli flowerets, cut into bite sized pieces
1 medium yellow summer squash, diced
  • Heat oil in skillet, add chicken, salt and pepper
  • Brown chicken
  • Place chicken and all other ingredients in your slow cooker
  • Cook in LOW for 8 hours
