RECIPE: Pepper Steak

serves 6
3 lbs. beef round steak, cut into strips
1 tbsp. minced garlic (fresh if you can)
1 tsp. paprika
1 onion, chopped
1/2 cup soy sauce
1 tsp. salt
1 tsp. ground black pepper
2 tsp. white sugar
3 bell peppers, various colors, cut into strips
1 tbsp. cornstarch
1/4 cup cold water

  • Brown beef strips in skillet (with heated oil) with paprika and garlic
  • Add beef mixture, onion, soy sauce, salt, pepper and sugar to slow cooker
  • Cook on LOW for 6 hours
  • Add peppers and continue to cook on LOW for an additional hour
  • Mix water and cornstarch in bowl
  • Add water mixture to slow cooker and heat to create a thick gravy (an additional 20 minutes)

Serve over white rice.
