RECIPE: Mac and Cheese, Southern Style

There are a buh-zillion recipes for a good Slow Cooker Mac and Cheese. This variation presents a unique take, with a bit of a kick, with KING SIZED flavor. Tweak it to your liking, of course, but this is a keeper.

Mac and Cheese, Southern Style

2 cups shredded sharp cheddar cheese (shred your own, it makes a difference)
1 cups cubed American cheese
1 can (12 oz.) evaporated milk
1 medium tomato, chopped (remove seeds)
6 scallions, chopped
2 teaspoons of chili powder
1 can (4 oz.) diced green chilis, drained
5 cups of cooked rotini (cook al dente as is will continue to cook a bit in the cooker)

  • Combine all ingredients, except tomato and onion, in slow cooker
  • Cook on HIGH for 2 hours, stirring after 1 hour
  • Stir in tomato and onion
  • Cook until hot throughout
Serve with garden salad and bread sticks.
