Mac and Cheese, Southern Style
2 cups shredded sharp cheddar cheese (shred your own, it makes a difference)
1 cups cubed American cheese
1 can (12 oz.) evaporated milk
1 medium tomato, chopped (remove seeds)
6 scallions, chopped
2 teaspoons of chili powder
1 can (4 oz.) diced green chilis, drained
5 cups of cooked rotini (cook al dente as is will continue to cook a bit in the cooker)
- Combine all ingredients, except tomato and onion, in slow cooker
- Cook on HIGH for 2 hours, stirring after 1 hour
- Stir in tomato and onion
- Cook until hot throughout
Serve with garden salad and bread sticks.
