The annual festivities (as celebrated in New Orleans) start on January 6, the Twelfth Night Feast of the Epiphany, when the three kings are supposed to have visited, and build to a climax on Mardi Gras, or Fat Tuesday, which always occurs on the day before Ash Wednesday. It is customary to consume copious amounts of food and drink on the day before Ash Wednesday, a day of fasting in many Christian traditions. One of New Orleans' traditional dishes is Jambalaya! This meal translates really well to Slow Cooker preparation.
