RECIPE: Fat Tuesday Jambalaya!

HAPPY FAT TUESDAY!
What is Fat Tuesday? : Fat Tuesday is also known as Mardi Gras ("Gras" is French for fat and "Mardi" is French for Tuesday). The annual festivities (as celebrated in New Orleans) start on January 6, the Twelfth Night Feast of the Epiphany, when the three kings are supposed to have visited, and build to a climax on Mardi Gras, or Fat Tuesday, which always occurs on the day before Ash Wednesday. The parties and parades will continue until Lent begins at the stroke of midnight on Tuesday.

It is customary to consume copious amounts of food and drink on the day before Ash Wednesday, a day of fasting in many Christian traditions. One of New Orleans' traditional dishes is Jambalaya! This meal translates really well to Slow Cooker preparation.

2 lbs. boneless chicken breasts
1 lb. smoked sausage (andouille), sliced
1 lb. cooked shrimp
1 can tomato (28oz.)
1 chopped onion
1 chopped green/red pepper
1 cup chicken broth
2 tsps. oregano
2 tsps. dried parsley
2 tsps. Cajun seasoning
1 tsp. cayenne pepper
2 cups cooked rice

  • Cube chicken
  • Place all ingredients (except the rice and shrimp) in slow cooker
  • Cook on LOW for 7 hours
  • With 30 minutes left on timer, stir in rice and shrimp
