Chicken Rice Soup
... a New England Flu Remedy
It's cold and flu season. This year has hit New England extremely hard. Everyone has a suggestion on how to take care of your cold. Sleep. Medicine. Fresh Air. A steady diet of cough drops and a box of tissues. Garlic?
Doctor King of Crock recommends lots of sleep and a big bowl of chicken rice soup. Here's an easy recipe for you to enjoy! I hope you feel better.
1 Cup Uncooked Regular long grain white rice
6 Cups of Chicken Broth (I use low sodium, low fat)
2 stalks celery, chopped
1 medium onion, chopped
1 red bell pepper, diced
1 bag of baby carrots
1 lb. boneless, skinless chicken breast, cubed
2 tsp. dried Thyme
1 tsp. garlic powder
1/2 tsp. chili powder
Salt & Pepper
- Place chicken cubes, carrots, onion, celery, and spices in your slow cooker
- Add the chicken broth
- Cook on LOW for 5 hours
- Remove lid, add the white rice, and stir
- Cook an additional 2 hours
- ENJOY!
- Feel better.
