In honor of this REALLY important holiday... here is a remarkably easy and delicious tortilla soup. If you are looking for the BEST in store bought tortillas... try Garden of Eatin organic chips (I think you can get them at Whole Foods Markets).
- 1-2 lbs. of chicken (breasts or thighs, boneless)
1 can whole crushed tomatoes
1 can enchilada sauce
1 onion, chopped
1 small can of chopped chile peppers
2 cloves of garlic, minced
4 cups of chicken broth
1 package frozen corn
1 can black beans, rinsed
- salt and pepper to taste
- Brown onion and garlic
- Place all ingredients in the slow cooker (except corn)
- Cook on LOW for 6 hours
- Add corn, cook for an additional 30 minutes
- Remove chicken and shred with forks, return to soup
- Serve with tortilla chips, shredded cheddar, and sour cream
