8 - 12 red bliss potatoes, quartered
1 yellow onion, diced
2 cups of baby carrots
2 tbsp. olive oil
1/2 tsp. garlic
1/2 tsp. salt
1/2 tsp. pepper
1 tbsp. fresh rosemary, chopped fine
- combine all ingredients in a large bowl and mix until the potatoes and carrots are coated evenly with oil and spices
- spray slow cooker with cooking spray
- place potato mixture in crock pot
- drizzle any remaining oil and spices over the potatoes
- cook on LOW for 6-8 hours
- ENJOY!
