White House?... I don't get it. I am not sure why this is called Chicken Casablanca, but this is a GREAT summertime recipe as it features many summer vegetables that are fresh from local gardens. Feel free to add different vegetables as they are available... try summer squash, green beans, bell peppers, etc. GOOD STUFF!
1 med. onion, sliced
1 tsp. fresh ginger, grated (can use ground ginger)
1 tsp. garlic piowder
3 carrots, chopped
2 lg. potatoes, peeled and diced
1 zucchini, sliced 1" thick (skins on)
1 15 oz. can chick peas
1/2 tsp. cumin
1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp. cinnamon
1/4 tsp. cayenne pepper
14 1/2 oz. can chopped tomatoes
2 tbsp. fresh chopped parsley
1 tbsp fresh chopped cilantro
1 tsp. fresh ginger, grated (can use ground ginger)
1 tsp. garlic piowder

- Combine first eight ingredients in slow cooker
- Combine spices in small bowl and sprinkle over chicken mixture
- Add chopped tomatoes over chicken
- Cook on LOW for 9 hours
- With 10 minutes left, stir in fresh spices
- Serve over cooked rice
