RECIPE: Spanish Chicken w/ Chorizo

A flavorful chicken dish, low in fat and calories. Serve with yellow rice or polenta.

4 boneless chicken breasts
1/2 cup chorizo, chopped
1 can (14oz.) of diced tomatoes
2 tbs. tomato paste
1 cup of frozen peas
1 yellow bell pepper, diced
1 spanish onion, diced
1 tbs. paprika (if you are looking for quality spices at affordable prices, the Nutmeg Spice Company can't be beat, check their site for local retailers)
1/2 tsp. salt
1 tbs. cornmeal
  • combine tomatoes, tomato paste, onion, bell pepper, chorizo, salt, and paprika in your slow cooker
  • top with chicken
  • cook on LOW for 6-8 hours
  • with 30 minutes left in cooking, add peas and cornmeal to thicken sauce
  • ENJOY!
