RECIPE: Mexican Meatloaf

This is an international twist on a classic American comfort food favorite... this ain't your mother's meatloaf! For an edible adventure... try experimenting with different salsas, there are SO MANY on the market. A few of the King's favorites.... Newman's Own Black bean and Corn , Pace Chunky Salsa , or you can even try your own (KING's FRESH SALSA) .

1 lb. ground beef
1 lb. ground pork
4 tablespoons of taco seasoning
2 cups of tortilla chips (the harder, round corn chip - they work best)
1 cup of shredder cheese (I like 1/2 cheddar, 1/2 monterey jack)
2 eggs, beaten
2/3 cup of your favorite salsa

  • Mix all ingredients together in bowl
  • Form mixture into a loaf
  • Place in Slow Cooker - make handles out of aluminum foil to lay under loaf for your convenience
  • Cook on LOW for 8 -10 hours
