RECIPE: Jerked Chicken

RECIPE: Jerked Chicken

2-3 lbs. chicken (tenders or boneless, skinless thighs)
1 large onion, finely chopped
1 Bell pepper, finely chopped
1 tablespoon chopped ginger (send it through the food processor)
2 tsp chili powder
1/2 teaspoon ground allspice
2 tablespoons dry mustard
2 tablespoons balsamic vinegar
2 tablespoons soy sauce
1 tsp garlic powder

  • Place chicken in the slow cooker
  • Mix all remaining ingredients and let stand for 20 minutes
  • Pour sauce over chicken
  • Cook on LOW for 8 hours
Serve with White Rice and Black Beans.
