On April 20th, the world celebrated National Pineapple Upside Down Cake Day. OK, I am not sure exactly how much celebrating happened, but I am sure there were some who made a delicious pineapple upside down cake for dessert. Did you know you can make a cake in your slow cooker? Cooking it LOW and SLOW gives the flavors enough time to "marinade". Give this one a whirl... I think you'll like it!
1 box yellow pound cake mix
1/4 cup butter or margarine
1/2 cup brown sugar
1 can pineapple rings, juice reserved
6 to 8 maraschino cherries
1/4 cup butter or margarine

- Mix cake mix according to package directions (use pineapple juice for part of the liquid)
- Melt butter in lightly greased bake pan (use whatever size bake pan that will fit inside your slow cooker)
- Stir in brown sugar and spread evenly over the bottom of the pan.
- Add pineapple rings with cherries in the middles.
- Pour in cake batter. Cover bake pan.
- Place into crockpot. Bake in covered crockpot on HIGH for 3 hours.
- Remove and invert immediately onto a large platter.
